Freezer Clean-Out Skillet Bake

This is basically a "throw in the skillet and make it magic" kind of meal. It's totally customizable. Change out the veggies, carb, or protein to whatever you like!

Ingredients

(Flexible — Use What You Have)

  • 1 tsp. Olive oil or spray
  • 1/4 cup Onion (or frozen diced onion)
  • 1/4 cup Frozen bell pepper
  • 8 oz. pack Turkey sausage or protein of choice
  • 3 cup Frozen diced potatoes or carb of choice
  • 1/2 cup Reduced-fat shredded cheese

Sauce (try to keep it the same):

  • 1 cup Low-sodium broth
  • 2 tbsp. Plain nonfat Greek yogurt
  • 1 tsp. Garlic powder
  • 1 tsp. Italian seasoning
  • Salt & pepper

Directions

  1. Preheat oven to 375°F.
  2. In a large oven-safe skillet, heat oil and sauté onion and bell pepper 2–3 minutes.
  3. Add frozen potatoes directly to the pan and cook 5-7 minutes until starting to soften.
  4. Stir in protein choice.
  5. Mix broth, yogurt, and seasonings. Pour into skillet and stir well.
  6. Let simmer 3–5 minutes to thicken slightly.
  7. Top lightly with cheese.
  8. Bake 15–20 minutes until hot and slightly golden on top.
  9. Let sit 5 minutes before serving.
